Winter flounder are right-eyed and summer flounder (fluke) are left-eyed. Lay the fish dark-side-up with its head pointing away from you: if the eyes are on the right, it is a winter flounder, and a different set of rules applies. That is a bag-limit question, not trivia. The species also carries antifreeze glycoproteins in its blood, which let it stay active in water at −1.5 °C — the reason it is feeding in shallow bays in February when every other flatfish has moved off to deep water.

Anchor over soft mud or mud-and-sand bottom in a bay or harbour in 6–25 ft, ideally where a slight channel edge breaks the flow. Put a chum pot on the bottom filled with crushed mussel, clam and corn, and then work the sinker deliberately against the bottom every few minutes to raise a mud cloud — winter flounder come to disturbance, and the mud plume is doing as much as the chum. Fish a spreader rig with small long-shank hooks in the size 8 to 12 range, because the mouth is tiny and set well forward for grazing the bottom. The bite is a delicate tap-tap-tap with no weight behind it; wait through the taps until the rod loads, then lift steadily rather than striking. Most anglers who blank on flounder are striking on the first tap.
